These Bran Flax Muffins are super healthy for breast cancer survivors following a whole-food, low fat, low sugar, anti-cancer diet


After I returned from our local Elk Grove Farmer’s Market

on this beautiful Saturday in September,

I was inspired to bake up a batch of super healthy Bran Flax Muffins.

I found a recipe for these muffins on the back of Bob’s Red Mill Whole Ground Flaxseed Meal , which I add to a variety of things for its whole grain goodness and high fiber and Omega-3 fatty acid content.

It’s a good recipe as is, but I’ve modified it over time- replacing white flour with wheat flour and brown sugar with Coconut Secret Raw Coconut crystals . As a breast cancer survivor doing my best to follow a nutritional whole-food diet that is particularly low in processed white flour and sugar and high in fiber, I’m quite please with the results of this modification!

1/2 Cup Replaces 1 Cup Brown Sugar


These muffins are moist, hearty and sweet.

Shredded carrots and apples provide sweetness and moisture.

This recipe is butter and oil-free.

By replacing the brown sugar with raw coconut crystal,(which is a nutrient-rich low glycemic product) the sugar content is significantly lowered without sacrificing a rich sweet taste.

High in Fiber and Omega-3 Fats

Another change I made is I don’t include the nuts

this recipe calls for and use ¼ cup more of raisins.

They are great warm with a touch of butter and/or honey.


1 ¼ Cups Whole Wheat Flour
¾ Cup Flaxseed Meal
¾ Cup Oat Bran
½ Cup Raw Coconut Crystals
2 tsp. Baking Soda
1 tsp. Baking Powder
½ tsp. Salt
2 tsp. Cinnamon
1 ½ Cups Carrots, shredded
1 Cup Apple, shredded
½ Cup Raisins, soak in water 10 minutes, drain
¾ Cup Milk
2 Eggs, beaten
1 tsp. Vanilla

Mix together flour, flaxseed Meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in carrots, apples and raisins.

Pour liquid ingredients into dry ingredients and stir just until moistened.

Fill lined or non-stick sprayed muffins cups to top.

Bake at 350 degrees F for 15-20 minutes.

Yields 12 medium muffins.
