Recipe #3- Chickpea and Pasta with Kale Pesto

With our refrigerator still full of Organic Baby Kale and a new Vitamix in the kitchen, my husband and I found  a recipe on the Vitamix website for Kale Pest.  I love basil pesto, so, what the heck, we decided to give kale pesto a try.  In the summer when my garden is full of basil, I make basil pesto over pasta, vegi’s and chicken.   So i took a look in the pantry and frig and and came up with multi-colored  assorted pasta, can of chickpeas, zucchini , tomato and spinach. We followed the directions for the kale pesto and then my own makeshift recipe to put the rest together Chickpea and Pasta with Kale Pesto.

Kale pesto tastes nothing like basil pesto, although it looks similar, but it did taste fresh, bold and healthy!

Vitamix Recipe for Kale Pesto

Pesto Ingredients

1/2 cup olive oil

2 teaspoons red wine vinegar

1/4 cup roasted red pepper

2 garlic cloves, roasted, peeled

1/2 teaspoon chopped fresh thyme

1 teaspoon lemon zest

2 tablespoons toasted pepitas

1/2 cup fresh spinach, loosely packed

1/4 teaspoon kosher salt

1/8 teaspoon ground black pepper

4 cups chopped kale

Directions for Kale Pesto

In a large pot of salted, boiling water, blanch 4 cups of kale for 4 minutes.

Shock in a bowl filled with ice and water; strain.

Once water has drained away, press out as much water as possible, leaving 1/2 cup of blanched kale.

Place all ingredients into the Vitamix container in the order listed and secure lid.

Select Variable 1 and turn machine on and slowly increase speed to Variable 7.

Using the On/Off switch to quickly pulse 15-20 times, using the tamper to press the ingredients into the blades.

(If you don’t have a Vitamix blender, I would use your blender or food processor, layering the ingredients as listed and process until creamy.)

Chickpea and Pasta with Kale Pesto Ingredients

8 oz package of pasta- multi-colored, assorted or bow-tie

2 Tbs. olive or grape seed oil

one 8 oz can chickpeas- drained and rinsed

One tomato, diced

One zucchini, sliced and halved

One cup spinach leaves, sliced

Directions

Cook pasta to package directions, drain and rinse with cold water

Heat oil on medium heat in a wide saute pan

Add cut zucchini and saute for several minutes until tender

Add  chickpeas, stirring until blended and heated through

Stir in pasta stirring until blended and heated through

Add, tomato and spinach

Add kale pesto

Stir until well blended and serve immediately

Garnish with shredded Parmesan cheese
