Recipe #4- Cashews and Kale

I found this quick-and-easy kale recipe on a blog I check out every now and again called “The Kicking Kitchen”.  The author has a cookbook out, “Kicking Cancer in the Kitchen” which is intriguing to me.

I was really pleased with this straight-forward recipe that uses basic ingredient and introduced me to a new one- Tamari.  I learned that Tamari is very similar to soy sauce, however it’s gluten free and I found it less salty than soy sauce.

I used baby kale, spinach and arugula, so I didn’t need to remove the stems from the kale.  I didn’t have any raisins and forgot the garlic and the dish still turned out very flavorful.  The cashews do soften up nicely in the saute’ pan and add a sweet and nutty flavor and as the author notes, “ups the protein, mineral and antioxidant content and are a great source of magnesium.”  Add that to the super nutrient dense kale and this side dish is a powerhouse!

My husband and I enjoyed it serve with baked salmon over quinoa.

Recipe #3- Chickpea and Pasta with Kale Pesto

With our refrigerator still full of Organic Baby Kale and a new Vitamix in the kitchen, my husband and I found  a recipe on the Vitamix website for Kale Pest.  I love basil pesto, so, what the heck, we decided to give kale pesto a try.  In the summer when my garden is full of basil, I make basil pesto over pasta, vegi’s and chicken.   So i took a look in the pantry and frig and and came up with multi-colored  assorted pasta, can of chickpeas, zucchini , tomato and spinach. We followed the directions for the kale pesto and then my own makeshift recipe to put the rest together Chickpea and Pasta with Kale Pesto.

Kale pesto tastes nothing like basil pesto, although it looks similar, but it did taste fresh, bold and healthy!

Recipe #2- Superfood Fruit and Kale Smoothie

A few days after hubby came home from Cosco with that HUGE bag of Baby Kale, he walked through the garage door and into the kitchen with a Vitamix Blender.

He had talked about it earlier that week when he was struggling (again) with the food processor that attaches to on our simple (cheap) blender.

“We don’t need one.  Aren’t’ they hundreds of dollars?  I do know some people that love it and use it all the time…. But we don’t need anymore things, ”  I said.

He gave me a look, that said something like, “You’re not my boss, you’re being too practical and taking all the fun out of spoiling you” all at the same time.

“Well don’t be surprised if I come home with one, “ he said as he fussed with the gunk inside the blender some more.”

I was still surprised.

And I love it! 

After reading the “how to” manual the night before, the first thing I made was this Superfood Fruit and Kale Smoothie. They recipe was on the back of the bag of kale and I already had all the ingredients-  so into the bender they went:

Yikes!  My husband came home from Cosco the other day with an ENORMOUS bag of baby kale.  So thoughtful and sweet of him, as I have been running my mouth about how super healthy kale is for you.
